What spec is he/she (either your idea of the archetypical Death Knight or Blizzard's incarnation)? Personally, I'm looking at Blizzard's.
I initially thought I would go with Frost, but thinking about it, the only truly Frost Death Knight I know of would be Arthas, and really, he's the Lich King not a Death Knight.
In that case then, probably Unholy. Death Knights in WC3 used Death Coil, Death Pact, Unholy Aura (increase movement speed and life regeneration) and Animate Dead. Definitely all a part of the Unholy repertoire.
Blood doesn't really fit in anywhere I can think of.
